Umami Girl Soft Shell Crab Sandwich

Ingredients:
- 4 soft shell crabs, cleaned
- 1 cup all-purpose flour
- 2 teaspoons Old Bay seasoning
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil for frying
- 4 soft sandwich rolls, split and toasted
- Lettuce leaves
- Sliced tomatoes
- Pickles or pickle slices
- Mayonnaise or aioli
- Hot sauce optional
Instructions:
In a shallow dish, mix together flour, Old Bay seasoning, salt, and pepper
Dip each crab into the seasoned flour, then into the beaten eggs, and finally into the panko breadcrumbs, pressing gently to adhere
Heat vegetable oil in a large skillet over medium-high heat
Fry the crabs until golden brown and crisp, about 2-3 minutes per side
Transfer the fried crabs to a paper towel-lined plate to drain excess oil
