Poppy Seed Muffins
These muffins with poppy seeds and a hint of lemony goodness are a delightful treat. They're the ideal choice for a snack or breakfast.
Ingredients:
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tablespoons poppy seeds
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup plain yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, combine the flour, sugar, poppy seeds, baking powder, baking soda, and salt
In another bowl, whisk together the melted butter, yogurt, eggs, vanilla extract, lemon juice, and lemon zest
Pour the wet ingredients into the dry ingredients and mix until just combined
Grease a muffin tin or use muffin liners, and fill each cup 2/3 full with the muffin batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean
Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack to cool completely
