Slow Cooker Green Chicken Chili
A tasty and comforting chicken chili with a green twist that's great for a cold night. In a slow cooker, this recipe is very simple to make, and the flavors will blend while you go about your day.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cans 15 oz each white beans, drained and rinsed
- 1 can 4 oz diced green chilies
- 1 cup chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 cup frozen corn kernels
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Optional toppings: shredded cheese, sour cream, diced avocado
Instructions:
In a slow cooker, combine diced chicken, onion, garlic, white beans, green chilies, chicken broth, cumin, oregano, chili powder, salt, and pepper
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and flavors are well combined
About 30 minutes before serving, stir in frozen corn kernels, cilantro, and lime juice
Continue cooking until heated through
Serve hot, optionally topped with shredded cheese, sour cream, and diced avocado
