Mini Cherry Cheesecake Sugar Cookie Cups



These Mini Cherry Cheesecake Sugar Cookie Cups are a delightful and bite-sized dessert option. The combination of sweet sugar cookie cups, creamy cheesecake filling, and luscious cherry topping makes for a perfect treat.

Ingredients:

  • 1 package refrigerated sugar cookie dough
  • 1 package 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 can 21 oz cherry pie filling

Instructions:

Preheat your oven to 350F 175C

Grease a mini muffin tin

Slice the refrigerated sugar cookie dough into rounds

Place one round of cookie dough into each mini muffin cup, pressing down to form a cup shape

Bake the cookie cups in the preheated oven for 10-12 minutes, or until the edges are lightly golden

Remove from the oven and use a small spoon to gently press down the center of each cookie cup to create an indentation

Allow the cookie cups to cool in the tin for a few minutes, then carefully transfer them to a wire rack to cool completely

In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy

Spoon or pipe the cream cheese mixture into the cooled cookie cups

Top each cookie cup with a spoonful of cherry pie filling

Refrigerate the mini cherry cheesecake cookie cups for at least 1 hour before serving

Serve chilled and enjoy!
