Low-Carb Chicken Herb Terrine



This Low-Carb Chicken Herb Terrine is a flavorful and satisfying dish perfect for those following a ketogenic diet. Packed with protein and fresh herbs, it's a delightful option for lunch, dinner, or as a snack.

Ingredients:

  • 500g ground chicken
  • 2 eggs
  • 1/4 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh chives, chopped
  • Salt and pepper to taste

Instructions:

Preheat oven to 350F 175C

In a mixing bowl, combine ground chicken, eggs, almond flour, parmesan cheese, minced garlic, chopped parsley, chopped basil, chopped chives, salt, and pepper

Mix until well combined

Line a loaf pan with parchment paper

Transfer the chicken mixture into the loaf pan and press it down evenly

Bake in the preheated oven for 45-50 minutes, or until cooked through and golden brown

Remove from the oven and let it cool slightly

Once cooled, refrigerate for at least 2 hours or until set

Slice and serve chilled
