Easy Peppered Chicken



This is a quick and tasty pressure cooker recipe for peppered chicken. Great for busy weeknights when you need a quick and tasty meal!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons cornstarch optional, for thickening

Instructions:

Season chicken breasts with black pepper, garlic powder, onion powder, paprika, and salt

Set pressure cooker to saut mode and heat olive oil

Sear chicken breasts on both sides until golden brown

Add chicken broth to deglaze the pot, scraping up any browned bits from the bottom

Cancel saut mode, secure the lid, and set pressure cooker to high pressure for 8 minutes

Once cooking is complete, perform a quick pressure release

Remove chicken from the pot and set aside

Switch pressure cooker back to saut mode and add heavy cream

Optional: Mix cornstarch with a little water and add to thicken the sauce

Simmer the sauce until thickened, then return the chicken to the pot to coat in the sauce

Serve the peppered chicken over rice or with your favorite side dishes
