Coconut Flour Chocolate Muffins



Enjoy these rich chocolate muffins made with gluten-free coconut flour. They are moist and taste great with chocolate. You can eat them for breakfast or as a dessert without feeling bad about it.

Ingredients:

  • 1/2 cup coconut flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy-free chocolate chips

Instructions:

Preheat oven to 350F 175C

In a large bowl, mix together coconut flour, cocoa powder, baking soda, and salt

In another bowl, whisk together eggs, melted coconut oil, maple syrup, and vanilla extract

Add wet ingredients to dry ingredients and mix until well combined

Fold in chocolate chips

Line a muffin tin with paper liners and fill each liner 2/3 full with batter

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean

Allow muffins to cool before serving
