Probably the Easiest Veggie Gumbo You'll Ever Make!
This veggie gumbo is incredibly easy to make and packed with flavor. It's perfect for a quick and satisfying weeknight meal. Plus, it's keto-friendly and loaded with nutritious vegetables like okra, cauliflower, and bell pepper.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- 2 cups okra, sliced
- 1 cup cauliflower rice
- Chopped fresh parsley, for garnish
Instructions:
Set the olive oil in a big pot over medium-low heat
Put in the chopped onion, minced garlic, chopped bell pepper, and chopped celery
It will take about 5 minutes of cooking until the vegetables are soft
Add the vegetable broth, paprika, thyme, oregano, cayenne pepper, salt, and pepper, and mix them in well
Bring the mixture to a low boil, then stir it every now and then for 10 minutes
Put the cauliflower rice and sliced okra in the pot
Let it cook on low heat for another 10 minutes, or until the cauliflower rice is fully cooked and the okra is soft
Check the seasoning and make any necessary changes
Serve hot with fresh parsley chopped on top
