Garlic Butter Chicken & Broccoli
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 4 tablespoons butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 tablespoons grated Parmesan cheese
- Fresh parsley for garnish
Instructions:
Season chicken breasts with salt, pepper, paprika, and dried thyme
In a large skillet, melt 2 tablespoons of butter over medium-high heat
Add chicken breasts to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through
Remove chicken from skillet and set aside
In the same skillet, melt the remaining 2 tablespoons of butter
Add minced garlic and cook for 1 minute, until fragrant
Add broccoli florets to the skillet and cook for 3-4 minutes, until tender
Pour in chicken broth and heavy cream, then bring to a simmer
Stir in grated Parmesan cheese until melted and sauce has thickened slightly
Return chicken breasts to the skillet and spoon sauce over them
Simmer for 2-3 minutes to heat through
Garnish with fresh parsley before serving
